THE BEST GINGER COOKIE EVER.

Cooking and baking are probably my favourite things to do with the kids. I make these ginger cookies with the kids a lot – you really can’t mess them up and the kids have fun rolling the dough around in the sugar. I hope you enjoy them as much as we do!

Ginger Molasses Cookies:

Wet ingredients:

1 cup of granulated sugar

1/3 cup vegetable oil

1/3 cup melted butter

1/4 cup molasses

1 large egg

*Mix wet ingredients together in large bowl.

Dry ingredients:

1 3/4 cups flour

1.5 tsp ground ginger

1 tsp cinnamon

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

*Mix dry ingredients together. Slowly pour dry into wet bowl and mix until combined. Place dough in fridge for 20 minutes while preheating oven to 350 degrees. Line cookie sheet with parchment paper. Roll dough into small balls and roll through sugar. Place on cookie sheet and bake for 8-10 minutes, depending on the size of cookie you roll. Basically you want to take them out right when they start to crack. They will still be a little puffy in the middle. Let cool on cookie sheet for a few minutes then transfer to a cooling rack. This is what makes the bottom crispy!!
